Cake Balls

Bake a cake mix according to package directions for a 9X13 cake. Allow to cool completely.  Using a fork break up the cake (I do this while it's still in the 9X13 pan).  Add 1/2 cup of frosting (butter cream, cream cheese or regular frosting).  At this point if you are wanting to make a few different flavors out of one cake mix this is the time to do it.
One cake mix divides three ways very nicely. Place your divided cake into three different bowls.  Now this is the part to be creative options may include: peppermint with crushed candy canes, orange oil extract, coconut extract with toasted coconut, recess peanut butter cups with an additional spoon full or so of peanut butter, rocky road, mint extract with Andes mints chopped up, strawberry extract, cherry etc. (amount for oils are 1t. if divided 3 ways) 
Using a cookie scoop (not to large) scoop out your flavored cake and place on a cookie sheet covered with wax paper. Freeze for 20 min. remove and roll or press into ball shapes.  Place them back into the freezer and allow to freeze completely at least 30 min. 
Using melting chips (can be found at Walmart, Zurchurs, Party Land or Fun Finity) dip and decorate your cake balls.

Really Good Cheap Granola

From: ?...
1 round canister of rolled or instant oats (15 cups)
3/4 cup water
3/4 cup oil
2-3 cups sugar or honey
2 t. almond extract
2 t. vanilla
2-3 t. salt
Mix all together except for the oats, then add the oats, mix well.  Let sit for 30 minutes. Spread on 2 large cookie sheets. Bake at 350 degrees for about 30-45 minutes stirring every 15 minutes until brown and crunchy.
* You can add nuts, coconut, raising, wheat germ, almonds etc.

Garden Pitta Pizza

3 whole wheat pita bread
1 T olive oil or vegetable oil
1 1/2 cups fresh broccoli florets
3 medium carrots thinly sliced (about 1 cup)
1 large green pepper chopped
1 medium green onion chopped
1 cup pizza sauce
1 cup mozzarella cheese grated
-Split pita bread into two flat round making a total of 6 rounds.  Place on baking sheets, bake at 400 degrees for 5 minutes or until lightly toaster.
-In a large skillet over medium high heat add oil, broccoli, carrots, green peppers and onion. Stir and cook until tender crisp.  Set aside.
-Spread pizza sauce on each pita bread, spread over each one equally the cheese and the vegetables. Bake 5 minutes at 400 degrees, just till cheese is melted.

7 minute Frosting

1 cup sugar 
1/3 cup water
1/4 t. cream of tarter
dash of salt
In a sauce pan bring this to a boil, stir until sugar dissolves and then don't stir.  In your kitchen aid or blender beat 2 egg whites. Slowly add your sauce pan mixture and beat until stiff peaks appear add 1 t. vanilla.

Fresh Fruit Dip

8 oz. cream cheese
1 pint marshmallow cream
2 T frozen unmixed OJ concentrate


Mix with a blender and serve with fresh fruit.  This is also fun to make fruit ca-bobs and serve this as a summer time appetizer:)

Grilled lime Chicken

8 boneless skinless chicken breasts
1/2 cup lime juice
1/3 cup olive oil
4 green onions chopped
4 garlic cloves minced/pressed
3 T chopped dill (or 1T dry dill)
1/4 t. pepper
Pound chicken breasts to flatten.  Combine ingredients mix into a gallon sized bag, add chicken and allow to marinate for at least 2-3 hours.  Grill and enjoy!

Guacamole dip

3-4 avocados
1/8 t. garlic powder
1/8 t. onion powder
1/4 cup lemon juice
1/2 cup sour cream
1/4 t. salt
1/8 cup chopped green onions
1 cup chopped tomatoes
Cut and smash the avocados and mix everything together:)

German Chocolate Cake

1 yellow cake mix
1 small box of chocolate instant pudding
2 eggs
2 cups milk
Mix. Spray and flour two round dishes. Bake at 350 degrees for 30 minutes. Frost your bottom layer with chocolate frosting, top with half of the "topping" mixture. Place on the top layer, frost and top with the rest of the "topping" mixture.
Topping:
In a sauce pan mix together the following ingredients.  Bring to a boil and stir for about 10 minutes until it's thickened:
2 eggs yolk
1 cube of butter
1 cup evaporated milk
1 cup sugar
Remove from heat and add 1 cup of coconut and 1 cup of chopped nuts

Fettuccine Alfredo Sauce

4 T butter
1 cup whipping cream
4 egg yolks
1/3 cup freshly grated Parmesan cheese
1/4 lb. smoked salmon (this is optional and can be used instead of chicken)
salt and pepper to taste
In a medium sauce pan melt butter and add your cream, simmer uncovered stirring over low heat for about 15 minutes (until it has reduced some).  Add a couple of tablespoons of cream to your egg yolks and whisk vigorously, then add this to your hot cream.  Add your parmesan cheese and salt and pepper, allow to thicken (continually stirring).  At this point you could add grilled chicken (my favorite) or salmon.  Serve over hot Fettuccine noodles.

Fruit Smoothie

1/4 can frozen OJ
1/2 cup ice
1 1/2 cups or so of frozen fruit (mixed)
1 8oz. carton of peach (or any of your favorite) yogurt
sugar to taste (you shouldn't need to add very much at all)
about 3/4 cup of water, just enough so it mixes in your blender

French Dip Sandwiches

1 lb. roast beef (sliced from the deli)
hogi buns
4oz. cream cheese softened
2 green peppers sliced
1/2 onion sliced
mozzarella cheese grated or sliced
1 T butter
Saute together your green pepper with your onion and butter.  Add the meat and heat till warm.  Cut the hogi buns in half and spread over each one 1oz. of cream cheese and sprinkle this with mozzarella cheese.  Toast hogi buns and top with meat mixture.  Serve with Campbell's beef consomme soup.

Frito Lay Salad

1 bag of Frito lays chips
2 can of kidney beans-drained
6 roma tomatoes-cut & without the juice
1 red pepper chopped
1 green pepper chopped
6 green onions chopped
1 16oz. bottle Kraft Catalina dressing
1 can of corn-drained


Mix everything together except for the chips and dressing and chill for 1-2 hours, add the chips and dressing right before serving. Delish!

Frosting

4 cubes of butter at room temperature
6 cups of powder sugar
1 T vanilla
1/2 cup cocoa powder (sift with powder sugar, this is if you want choc. frosting)


Beat the butter and then add the powder sugar and vanilla, mix for a while on high to beat in some air (this will make it lighter and more fluffy)

Fruit Tart

Mix together:
8 oz. cream cheese
1 cup powder sugar
1 1/2 cup whipped cream (measurement is before it has been whipped)
Crust:
1 3/4 cup flour
1 t. lemon juice
1 t. salt 
1/4 t. baking powder
1 T sugar
1/4 cup butter 
1/2 cup butter flavored Crisco

5 T ice water (more or less, your looking for a good cookie dough consistency)


Mix together all but the first 5 ingredients, then cut in the fat and the water. Roll out your dough and fit this in a pie pan, poke holes in the bottom and the sides.  Refrigerate this for about 20 min. or until it has chilled. Bake the crust at 400 degrees for approx. 15 min. or until lightly golden brown. 
Let the crust cool and then spread your cream cheese mixture down carefully, place fresh fruit and then coat with a jam glaze. (Jam glaze is a couple of good scoops of jam thinned with 1 T. water and then heated till it becomes thin).  Serve chilled. 



Fudge Sauce

1 can of canned milk
1 cup chocolate chips
1 can sweetened condensed milk


Heat the milk and add the chocolate chips and stir until melted.  Add the sweetened condenced milk and bring to a boil.  Continue stirring and allowing it to bubble until it thickens and reduces down.  This could 15-20 minutes.


Serve over ice cream or brownies:)

Eclair dessert

8 oz. container cool whip
2 small pkg. french vanilla instant pudding
3 1/2 cups milk
Frosting:
2 cups powder sugar
3 T cocoa
2 T vegetable oil
3 T milk


Mix the milk and pudding.  When it thickens fold in cool whip.  Put a layer of graham crackers at the bottom of a 9X13 dish. Place 1/2 of the pudding mix over the graham crackers, cover with graham crackers.  Place remaining pudding over the crackers and top with one last layer of graham crackers.  Spread carefully with frosting. Allow to cool in the fridge for 1 to 2 hours.

Dill dip

1 cup sour creme
1 cup mayonaise
1 T minced onions
1 T dried parsley flakes
1/2 T dried dill 
1/2 t. season salt


Serve with veggi's

Garlic naan bread recipe

1 T. active dry yeast
4 T. sugar
1 cup warm water
1 beaten egg
3 t. warmed milk
2 t. salt
3 to 3 1/4 cup flour
2 garlic cloves minced
1/4 cup melted butter
parsley flakes or cilantro


Place first three ingredients in your bosh bowl, mix just to dissolve and proof the yeast for about 10-15 min.  Add all remaning ingredients except the butter and parsley.  Mix the dough for about 2 min. on speed 2 (this should be the consistency of a soft dough) Allow the dough to raise until doubled, roll this into small balls, let raise again.  At this point you will roll out the balls of dough, if you are making pizza on the grill, place some flour on the back side of a cookie sheet put two of your rolled out "minni" pizza's on the sheet and fix it with your pizza toppings and sauce.  Grill for just a few minutes and serve (this is delish, we have this all the time and every person who has tried it loves them).  


If your making naan bread to go along with your curry dish or coconut thai curry dish etc. you'll place them on a grill that has been oiled (before heating of course) and once it is cooked on both sides (just a couple min.) brush melted butter over the top and sprinkle with parsley or cilantro.  Both are great, and so easy to do, enjoy!:)

Italian Salsa

3 lbs. tomatoes
1/4 c chopped red onion
1/4 c fresh basil
1 roasted bell pepper diced
1/2 c olive oil
1 T. balsamic vinegar
2 cloves garlic
salt and pepper to taste
optional-shake red peper flakes, 2 dashes chile oil


Serve with toasted banquette bread. This is so delicious, I could have just eaten this for dinner and had nothing else:)

Picnic Chicken

1/4 c soy sauce
1/4 c honey
1/4 c Catsup
1 clove garlic, crushed

Marinate chicken overnight, then grill.

Richest ever chocolate chip cookies

1 cup butter
2 eggs
1 cup sugar
1 cup brown sugar
1 t. vanilla
3 cups flour
3/4 t. salt
3/4 t. baking soda


Beat butter, and sugars together until they become light (in color and consistency) about 6 or so minutes.  Add to that eggs, and vanilla.  Mix together your flour, salt & soda, add the flour to the butter mixture along with 1 cup of chocolate chips.  Bake at 350 for 8-9 minutes if you like it underdone or 10-12 minutes if you like yours brown (not burnt just brown)  Kev and I have a different opinions on the "best" cookie so I cook some longer and some not so long:)

Tortellini soup

1 lb. italian sausage
1 onion chopped
2 cloves of garlic minced
1/2 cup water
2 cans of beef broth
1/2 cup apple juice
1 28 oz. can of crushed tomatoes
1 t. basil
1 t. oregano
4 T fresh parsley chopped
3 carrots julienne
1 cup sliced zucchini
1 green pepper chopped
8 oz. tortellini
grated parmesan


Brown sausage, drain fat, add onion and garlic cook for a couple of minutes.  Add all remaining ingredients except for the tortellini. Simmer for 30-45 minutes. Add tortellini 10 minutes before serving! Delish!!

Banana crumb muffins

1 1/2 cup all purpose flour
1 t. baking soda
1 t. baking powder
1/2 t. salt
3 banana's mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup melted butter
1/3 cup packed brown sugar
2 T all purpose flour 
1/8 t. cinnamon
1 T butter


Preheat oven to 375 degrees.  Lightly grease or line 20 muffin cups.  In a large bowl mix together 1 1/2 cup flour, baking soda, baking powder & salt. In another bowl beat banana's, sugar, eggs and melted butter.  Stir the banana mixture into the flour mixture just until moist.  Spoon into your prepared muffin pans.  Mix brown sugar, 2 T flour and cinnamon cut in 1 T butter. Crumble this together and sprinkle over the muffins. Bake for  18-20 min. check for doneness.

Fresh Salsa

1 white onion (big)
1 bunch of cilantro (leaves, not stems)
Juice of 1 lime
4 tomatillos (husk removed and sticky stuff washed off)
1-2 jalepeno peppers
4 cloves of garlic (garlic press makes this really easy)
4 tomatoes (I put more in; romas are best—but a combo is good too)
2 teaspoons salt

Peel garlic and onion. Use all parts of the jalepeno for warmer salsa, or remove the seeds and white inner flesh for mild salsa. Using a food processor chop the onion, garlic, cilantro, tomatillos, and jalepenos together.  Add the salt and lime juice and mix well. Again, somewhere between chop and puree the tomatoes. Mix and enjoy!

Homemade liquid laundry soap

4 c. hot tap water
1 Fels-Naptha soap bar
1 cup Arm & Hammer super washing soda
½ c. 20-Mule Team Borax Natural Laundry Booster
Grate bar of soap and add to water in saucepan.  Stir constantly over medium-low heat until soap dissolves and is melted.
Fill a five-gallon bucket half full of VERY hot tap water.  Add melted soap, washing soda and Borax.  Stir well until all powder is dissolved.  Fill bucket to top with more hot water.  Stir, cover and let sit overnight to thicken.  You can add 10-15 drops of essential oil per two gallons, once soap has cooled.
Use 5/8 cup per load for top loading washing machine.  ¼-1/2 cup for front loading or high efficiency.  It cleans great, is nice for those with sensitive skin, and you can make five gallons for about $2.00.
*I use about 2/3 cup for my he washer.  You can get all of these items at Macey's grocery store. I can not say that this is "safe" for he washers however I have not seen problems in my he washer....use at your own discretion.

Chili sauce

6 hot peppers (don't use seeds) 
36 medium tomatoes, peeled and chopped
8 onions
4 red peppers (sweet)
8 garlic cloves
Grind all but tomatoes in blender
Add:
1 qt. vinegar
1/2 cup salt
3 cup sugar 
1 1/2 cup brown sugar
2 t. nutmeg
1 t. ginger
2 t. cinnamon
1 t. black pepper
1/2 t. cayenne pepper
3/4 t dry mustard
2 1/2 t. all spice
Cook together 2 1/2 hours or until thick. Seal in sterile jars.  This makes quit a few pint jars, I am thinking about 20 give or take.

Spaghetti Sauce

24 cup peeled chopped tomatoes
4 T. brown sugar
2 T. crushed oregano
2 T. crushed basil
2 T. salt
1 t. black pepper
4 bay leaves
6 t. beef bouillon
3 small cans tomato paste
3 cup onions
3 cups celery
3 cups green peppers
Mix together, simmer down 1 hour.  Bottle, process in a water bath for10 min. or pressure cook at 15 lbs. of pressure turn off heat and cool.

Spaghetti Sauce

1 1/2 buckets of tomatoes (5 gallon buckets)
8-10 cups of peppers (7 whole)
10-12 cups onions (8 medium)
1 cup sugar
3 T. oregano
1 cup vegetable oil (I use a little less)
1/2 cup salt
2 T. basil
2 T. minced garlic
2 t. sage
4 hot peppers
1 cup vinegar
2 t. thyme
3 T. Italian seasoning
2 t. rosemary
1 T. garlic powder
4 pkg. spaghetti sauce mix
4 12 oz. can tomato paste (add at the end)
Mix together and pressure cook at 10 -13 lbs. of pressure for 40 minutes
*Makes 18 quarts

Apricot and Berry Jam

7 cups of total fruit ie. apricot's, raspberries, black berries etc. (when using apricot's puree the fruit before measuring)
1 pkg. sure gel or pectin
8 cups sugar
Put your 7 cups of fruit and the sure gel into a large stock pot and while stirring bring to a boil (this needs to be a very full boil).  Add the sugar and again bring to a full roiling boil, once it has come to a boil set the timer for 90 seconds.  Remove from heat and pour into your prepared pint jars.
*If using more than 3 cups of apricot's in your fruit ratio you'll need to use 1 1/2 packs of sure gel or it wont set thick enough.
*While boiling your fruit and before adding the sugar if the fruit begins to froth you can add 1t. of butter to solve the foaming.
*One batch will make about 4 1/2 pints.
*While cooking your jam heat water in another large pot and place your pint jars upside down in the water and allow it to boil, this will not only sterilize the jars but also help it to sill.  You do not need to process this once the jam is in the pint jars wipe down the top of the pint jars and hand tighten, they will sill by themselves.

Almond Chicken Salad

4 cups cubed cooked chicken
1 1/2 cups green grapes-cut into half
1 cup chopped celery
3/4 cup sliced green onion
3 eggs hard boiled and chopped
1/2 cup mayonaise
1/4 cup sour cream
1 t. mustard
1 t. salt
1/2 t. pepper
1/4 t. onion powder
1/4 t. celery salt
1/8 t. dry mustard
1/2 cup sliced almonds-toasted
In a bowl combine first 5 ingredients, in a separate bowl mix everything else together except for the almonds.  Gently stir it all together, add almonds just before serving.

Fresh Apple Bars

Mix and let stand for 10 min:
1 cup sugar
1 3/4 cup raw apples peeled and coarsely chopped
Grease and flour a 9X13 dish, preheat your oven to 350 degrees
Mix:
1 1/2 cup flou
1 t. baking soda
1/4 t. salt
3/4 t. cinnamon
1/4 t. nutmeg
1/4 t. all spice
1 egg
Add the apples and sugar mixture along with 1/2 cup of melted butter, press into your 9X13 glass dish and bake for 30 minutes.
Glaze:
1 1/2 cup powder sugar
1 T. vanilla
2-4 T cream
Heat in a sauce pan stirring constantly until smooth and not "powder sugarish"
Pour this right over the apple bars once they are out of the oven, cool and serve.  This is one of my favorite treats, I really love this in the fall!

Apple pie filling (canned)

10 cups apple juice
1/2 cup cornstarch
1/2 cup ultra gel
4 1/2 cup sugar
5 t. cinnamon
2 t. nutmeg
1/4 cup lemon juice


Cook till thick and pour over raw peeled apples that are in your quart jars, process this using a water bath method for 35 minutes.

Apple Pie

1/2 cup sugar
1/3 cup brown sugar
2 T flour
1/2 t. cinnamon
1/4 t. nutmeg
1/4 t. salt
2 T melted butter
6-7 cups thin sliced apples (roma, jonathon or gala)
Put everything except for butter and apples into a bowl and mix.  Add apples and stir to combine.  Dump this into a pie crust.  Slice butter over the top, place your top crust over the apples and finish the edges.  Cut  at least 4 slits into the top of the crust.  Whisk one egg and brush this over the top of the crust and edges, sprinkle with cinnamon and sugar, bake this at 375 degrees for 25 minutes covered with foil, remove the foil carefully and continue baking for an additional 25-30 minutes.  Serve with freshly whipped cream (add to your cream a little sugar and vanilla).  This is to die for apple pie:)

Ande's Mint Cookies-kid friendly!

Take a Devils Food cake mix add to this 1/2 cup of vegetable oil and 2 eggs.  Drop spoonfuls of cookie dough onto your baking sheet and bake at 350 degrees for 8-10 minutes.  While the cookies are cooling, place an Ande's mint on top of each cookie.  Let sit for 5 minutes and smooth out the melted mint on top of each cookie. Yum!!

Rolls

5 cups hot water
1 cup sugar
1 cup evaporated milk
4 T yeast
4 eggs at room temperature
14 cups flour
4 t. salt
1 cup oil
Combine first 6 ingredients in your bosh (using the whisk beater) reserving 3 of the cups of flour, beat just till mixed.  Switch to your dough hook.  Let raise till the dough is to the top of your bosh bowl, turn on the bosh and beat the dough down, add salt oil and remaining flour to make a soft dough.  Mix on speed 1 for 10 minutes.  Form rolls, raise until doubled and cook at 375 degrees for 10-12 minutes.
*Cinnamon roll modification:
Increase sugar to 1 1/2 cups, roll out to a 14X30 rectangle, spread over this 1 cube of butter, 1 cup of brown sugar and some cinnamon.  Bake.
This is such a great recipe these rolls/cinnamon rolls are amazing!

Apple Crisp

Mix together and set aside:
8 cups sliced apples
2/3 cup sugar
1 t. cinnamon
4 T melted butter
Mix:
1 1/2 cups flour
1 1/2 cups brown sugar
1 1/2 cups oatmeal
1/4 t. baking soda
1/4 t. baking powder
1/2 t. salt
3/4 cup melted butter
Place the apple mixture in a greased 9X13 dish, top with the flour mixture and bake at 350 degrees for 45 minutes.

Artichoke dip

4 cloves of garlic chopped/minced
1 10 oz. package frozen chopped spinach (thawed and drained, use cheese cloth it makes this so much easier)
1 14 oz. can of artichoke hearts-drained and chopped (do not used marinated)
1 15 oz. container of Alfredo pasta sauce (Bortelli brand)
2 cups shredded mozzarella cheese
1/3 cup grated parmesan cheese
1 8 oz. package of cream cheese-softened


Mix ingredients together, put into a crock pot and cook on low for 2 to 3 hours (this is the preferred cooking method). 
*You can also preheat your oven to 350 degrees and cook this in a 9X9 dish covered for 30 min.
I like to serve this with baguette bread that I have sliced and toasted in the oven then use a fresh piece of garlic and cut off the end and rub over the hot bread, it will melt like butter onto the toasted bread....so good!

Apple Syrup

1 can of apple juice
1 can of water
1/2 cup sugar
1/2 t. nutmeg
3 T cornstarch


Mix ingredients in a sauce pan and bring to a boil once it is at a full boil cook for about 1 minute. This is so good, I could almost just drink it, try this over german pancakes it is delicious!

Bacon Pasta Salad

1 pkg. uncooked pasta (12 oz) (I use a 16 oz. box of my favorite pasta)  
10 slices bacon, cooked and crumbled  (I use the whole pound cuz who doesn't looove bacon?)
1 c. mayo
1 pkg. dry ranch dressing mix
¼ tsp. garlic powder
½ tsp. garlic pepper
½ c. milk, or as needed (I always use a little more)
1 large tomato, chopped
1 can sliced black olives
1 c. shredded cheddar cheese

Bring a large pot of lightly salted water to a boil.  Stir in pasta and cook until al dente: drain.  In a large bowl, mix mayo, dressing mix, garlic powder, and garlic pepper.  Stir in milk until smooth.  Place pasta, bacon, tomato, olives and cheese in bowl and toss to coat with dressing.  Cover and chill at least one hour.  Toss with additional milk if salad seems dry.


Raspberry Cheesecake Salad

3 small boxes cheesecake instant Pudding 
1 pack Graham crackers 
3 cups milk 
3 tbsp butter 
2. Tbsp sugar 
16 oz cool whip 
Bag frozen rasp 

Crush crackers in original bag then pour into ziploc bag (crush more if needed). Add melted butter and sugar and mix together. Put the bag in the fridge. Mix pudding and milk with a mixer until smooth. Stir in cool whip with a spoon. Refrigerate until ready to serve. Stir in graham cracker mix and frozen raspberries right before you serve.

Scotcharoo's

6  cups of rice crispies
1 cup light Karo syrup
1 cup sugar
1 cup peanut butter
6 oz. chocolate chips
6 oz. butter scotch chips


Melt sugar, peanut butter & Karo over medium low heat.  Once sugar has dissolved (do not let boil) pour over the cereal and mix to coat.  spread in an un-greased 9X13 pan.  Melt in the microwave the 6 oz. of chocolate chips and the 6 oz. of butter scotch chips. Spread over the cereal mixture.  I have found to cool the chocolate topping so it sets I put this in the freezer for about 10 minutes or so then I can take it out and it's perfect to cut, the chocolate will be set and not gooey.

Chocolate Crackle Cookies

3/4 cup margarine
2 T vanilla
3/4 cup cocoa powder
1/2 T baking powder
4 eggs
2 cups sugar
2 1/4 cups flour
1/2 t. salt


Mix the dough (wet together & then dry together then combine).  Roll into balls and dip in powdered sugar.  Put onto a greased cookie sheet.  Bake at 350 degrees for 10 to 12 minutes or until done.

Chocolate Cake

2 cups milk
2 eggs
1 small box of chocolate instant pudding
1 box of yellow cake mix


Beat this together until well combined. Bake at 350 degrees for 30 to 40 minutes, check for doneness.
This is a good birthday cake or any cake for that matter recipe, it turns out very moist.  You could also have some fun with it and exchange the chocolate pudding for coconut pudding  or cream cheese pudding then do strawberries and cool whip/cream on the cream cheese cake or a coconut frosting with toasted coconut on the coconut pudding cake:)

Chocolate Peppermint Pie

1 candy cane crushed
1 jar or Mrs. Richardson's fudge sauce
1 1/2 cup of heavy mixing cream
Mix with a whisk
1/2 cup sugar
1/4 t. salt
3 T sugar
In a microwave safe bowl add your sugar mix along with 2 cups of milk, whisk.  Microwave 3 minutes whisk, microwave 3 minutes whisk, microwave 2 minutes whisk.  In a separate bowl whisk 3 egg yolks together, temper this by adding a couple spoonfuls of the hot milk mixture to the eggs while stirring vigorously.  Add all of this back into the milk mixture and microwave for 2 more minutes and whisk.  Add 1 cup of chocolate chips and 1 T vanilla.  Cover with saran wrap and let chill in the refrigerator.
Once pudding is cooled put the heavy whipping cream into your kitchen aid and beat until stiff peaks appear.  Remove about 1 cup of whipped cream and reserve this for your topping.  Add the chocolate pudding to the remaining cream and mix just until combined.  Put this into a prepared cooked crust, let chill in fridge until ready to serve.  Just before serving decorate the top with your reserved cream and sprinkle on the crushed candy canes.  This is to die for, it looks like a lot of work but it really doesn't take that long, I make this every year for Thanksgiving, don't plan on left overs:) Look under pies for the pie crust recipe.

Cream Cheese Chicken Braid

2 1/2 cups cooked shredded chicken
1/4 cup chopped onion
8 oz. cream cheese
4 T butter
1/2 t. season salt
1/4 t. pepper
Combine all ingredients, spoon the filling down the center of dough that has been rolled out into a rectangle.  Using kitchen scissors cut into the sides of the rectangle length wise about an 1" apart and 1 1/2 to 2" deep.  Braid the dough putting one piece of dough over another until you have covered all of your filling and it is braided to the bottom.  Bake at 350 for about 20 minutes, check for doneness, depending on your oven it may need a little less time or more time.
Sauce:
1/2 can cream of chicken soup with 1/2 soup cream. Heat and serve.

3 chicken breasts cooked and chopped
8 oz. cream cheese softened
4 T butter softened
1/2 cup green onions chopped
1/2 t. pepper and dehydrated onions
2 tubes of refrigerated biscuit
melted butter
croutons, crushed & Parmesan cheese.  Mix this together.
1 can cream of chicken soup


Mix the first 5 ingredients, form into balls (about 1 T).  Put this into the middle of a bisquit, fold over the edges adn press, dip into the melted butter and roll in crushed croutons and Parmesan.
Space on a baking sheet and bake at 375 degrees for 15 to 20 minutes.  Serve with cream of chicken soup thinned with 1/2 can worth of milk or water.

Caramel's

2 cups sugar
2 cups Karo
1 cube of butter
2 cups of cream


Melt together and bring to a boil the first 3 ingredients, when it begins to boil add slowly the 2 cups of cream.  The longer the caramel takes to come up to temperature the deeper the caramel flavor, so add the cream very slowly.  Cook until it reaches 232 degrees (using a candy thermometer).  Pour into a greased 9X13 dish.  I make this every year and wrap in candy wrappers and give as Christmas gifts, it's such a fun and tasty treat.


Note: Kevin and I have experimented with this and have found that adding about 3/4 to 1 cup of toasted chopped pecans added right before pouring into your dish makes it extra special.  Also we add to this once it has sat for a couple of minutes in the pan a sprinkle of course sea salt, it tastes very similar to some very expensive caramels we had one year.  Enjoy!

Beef Stick

Mix this together cover and let sit over night in the refrigerator:
4 lb. lean hamburger
1/4 cup quick tenderizer blend salt
Add to the meat and mix:
2 T. liquid smoke
2 t. garlic powder
1 T. peppercorn or 2 t. ground pepper


Roll into 4 or 5 logs and wrap in cheese cloth, bake on a broiler pan for 4 hours (this will allow the fat to drip away form the meat) at 225 degrees.  Once cooled wrap in seran wrap and let chill for 4 hours in the refrigerator before serving.  Store in fridge.  This is a perfect party item, serve with homemade cheese ball and crackers:)

Crock Pot Chicken Divan

4 chicken breasts
1/2 to 1 t. curry powder
2 can cream of chicken soup
1 cup mayonnaise
4 cup broccoli


Put chicken into the crock pot, top with broccoli.  Stir the remaining ingredients and pour over the top of the chicken and broccoli.  Cook on high for 3 to 4 hours.  Serve over rice.

Cream Cheese Frosting

4 oz. softened cream cheese
1/2 cup powder sugar
1/2 t. vanilla
milk

Mix and serve over cinnamon rolls:)

Caramel Corn

1 cube butter
1 can sweetened condensed milk
1 lb. (2 cups) packed brown sugar packed
1 cup Karo


Bring to a boil, let boil for about 8 minutes or so (this should look like a nice caramel color).. Pour over popped corn, this makes a large bowl (I use my largest silver bowl worth of popcorn, remember to remove un-popped corn).  So so good!

Cheesy Hamburger Soup

1 lb. hamburger cooked
2 1/2 cup water
1 to 2 t. beef flavoring
1/4 t. garlic
1 to 2 carrots shredded
3 potato's
salt and pepper to taste
2T flour
1 cup milk
1 1/2 cups shredded cheddar cheese
1 handful of peas


In a large pot cook the first 7 ingredients until potatoes are soft. Mix the flour and milk together and add to the pot, stirring constantly.  Add the peas remove from heat and add the cheese stir well, and serve.
