Homemade Granola

8 cups rolled oats
1 cup sweetened coconut flakes
1 cup of flax meal {optional}
1 cup sliced almonds or whole raw almonds chopped or your favorite nut.
3/4 cup coconut oil or safflower oil or canola
1 cup brown sugar
1/2 cup honey
1/2 tsp. salt1 T. vanilla
{Optional} 1 cup of dried fruit of your choice such as raisins, blueberries, cranberries, or banana chips.

Directions:
Step 1: Pre-heat oven to 325 degrees Fahrenheit.  Measure the oats, coconut, nuts, flax meal and put in a large mixing bowl and stir well.
Step 2: In medium saucepan heat the coconut oil, brown sugar, honey and salt  on medium stirring until the sugar dissolves. Then add the vanilla and stir well.
Step 3: Pour the sugar mixture over the oats and stir well until combined.
Step 4: Spray 2 12 X 17 inch pans with cooking spray then half the oat mixture between the two pans. Spread the oats out evenly. Bake for about 20 min. stirring at least twice while the granola bakes, it should be a golden brown color. Cool completely, then add the dried fruit if using and store in airtight container for up to 3 weeks.
This is very good, it tastes fabulous, all I had on hand was canola oil and so that's what I used, it was perfect!

Buttermilk Syrup

2 cubes butter
1 1/2 cups sugar
1 cup buttermilk (you can make your own by mixing 1 cup of milk with 1 t. of lemon juice and microwaving for about 35 or so sec. it will look lumpy on top, that's how you know it's right)
1 t. baking soda
1 t. vanilla


Combine first 3 ingredients in saucepan until boiling.  Take off heat and add baking soda and vanilla.  Serve with German pancakes:)

German Pancakes

2 T butter
6 eggs
1/2 pkg. cream cheese
1 cup milk
3 T honey
1 cup flour
1/2 t. salt
1/2 t. baking powder


Preheat oven to 400 degrees. Place butter in a 9X13 baking dish and place in the oven until butter sizzles. (You can also just spray your dish with pam) Place remaining ingredients into a blender and blend until smooth.  Remove pan form oven and immediately pour batter into it. Bake until puffed and golden brown about 20-25 minutes.  Serve warm with desired toppings. (Fruit, powdered sugar, jam, whipping cream and your favorite syrup)  See Buttermilk Syrup recipe

Really Good Cheap Granola

From: ?...
1 round canister of rolled or instant oats (15 cups)
3/4 cup water
3/4 cup oil
2-3 cups sugar or honey
2 t. almond extract
2 t. vanilla
2-3 t. salt
Mix all together except for the oats, then add the oats, mix well.  Let sit for 30 minutes. Spread on 2 large cookie sheets. Bake at 350 degrees for about 30-45 minutes stirring every 15 minutes until brown and crunchy.
* You can add nuts, coconut, raising, wheat germ, almonds etc.

Crepe's

3 cups milk
2 cups flour
1 T sugar
dash of salt
4 eggs
1/2 stick of butter


Mix and cook in a non stick skillet.  Lisa says for her family she 1/2's the recipe, this is from her friend in New York and it's delish!
