Cookie dough mix

From: Rochelle...

1 8oz. pkg cream cheese
1/2 cup powder sugar
1 cup powder sugar
2 T brown sugar 
1 1/2 t. vanilla
1 cup chocolate chips
1 cup toffee bites

Beat first 2 ingredients until smooth.  Add remaining ingredients and mix.  Serve with nilla wafers  or my favorite granny smith apples.  This is a great party pot luck treat!

Play dough

From: Pinterest...

5 cups water
5 cups flour
2 1/2 cups salt
3 T cream of tarter
10 T vegetable oil
food coloring

Mix the water, salt, cream of tarter and food coloring together in a pan.  Cook on medium-low stirring constantly until the mixture is hot.  Add your oil and stir in the flour one cup at a time stirring after each addition.  Mix until playdough pulls away form the pan and is no longer sticky.  Place on counter and when it has cooled just a bit knead the dough until it is all mixed together.

For Christmas time divide the batch into two pans only adding red food coloring to one of the pans, when your kneading your dough on the counter add glitter, even peppermint oil for a fun smell.  Divide each the white batch and the red into 8 equal pieces and roll into about a 6-8" snake, twist together. Place in a mason canning jar add cute scrap paper to the top and a nice card "Candy Cane Playdough" Voila darling Christmas presents for your children's friends.

Spinach Salad

18 oz fresh baby spinach, stems removed
2 medium tart apples, chopped
2/3 cup peanuts
1/4 cup thinly sliced green onions
2/3 cup vegetable oil
1/4 cup vinegar
1 t salt
1 t ground mustard
1/2 cup raisins
2 T sesame seeds, toasted
1/3 cup honey
1 T grated orange peel
1 t curry powder

In a large bowl, combine the spinach, apples, peanuts, raisins, onions, and sesame seeds.  In a jar with a tight fitting lid, combine the remaining ingredients; shake well. Drizzle over the salad and toss to coat; serve immediately.

Chicken Wild Rice Soup

2 quarts chicken broth
1/2 lb fresh mushrooms, chopped
1 cup finely sliced celery
1 cup shredded carrots
1/2 cup finely chopped onion
1t chicken bouillon granules
1t dried parsley flakes
1/4 t garlic powder
1/4 t dried thyme

1.4 cup butter
1/4 cup flour
1 can condensed cream of chicken or mushroom soup, undiluted
1/2 cup additional chicken broth
3 cups cooked wild rice
2 cups cooked, shredded chicken

In a large saucepan combine the first nine ingredients.  Bring to a boil. Reduce heat; cover and simmer for 30 minutes.  In a soup kettle or Dutch oven, melt butter.  Stir in flour until smooth.  Gradually whisk in broth mixture.  Bring to a boil; cook and stir for 2 minutes or until thickened.  Whisk in soup and additional broth.  Add rice and chicken; heat through. Yields 3 1/2 quarts

Turkey Breast-crock pot/Kneaders Focaccia sandwich

1 5-6 turkey breast, fresh or thawed
2 T butter
1/4 cup garden veg flavored whipped cream cheese
1 T soy sauce
1 T parsley
1/2 t dry basil leaves
1/2 t rubbed sage
1/2 t dried thyme leaves
1/4 t pepper
1/4 t garlic powder
Place turkey in a crock pot.  Combine remaining ingredients and brush over turkey.  Cook on low for 8-10 hours, or on high for 4-6 hours.  Shred with fork using broth from pot. Makes about 8 cups shredded turkey. 
To make Kneaders style Focaccia sandwiches, add about 1 cup shredded turkey to one half of focaccia square, top with Casear Vinaigrette dressing.  Layer provolone cheese, green leaf lettuce, red onion, pickles, and tomatoes on the other half.  Put both sides together, and serve:)

Chicken Diane

4 boneless chicken breasts-pound thin
1/4 cup chicken broth
1/2 tsp salt
1/4 tsp pepper
2 T oil
2 T butter
3 T green onions
juice from 1/2 lime
3 T parsley
2 tsp. dijon mustard

Cook chicken in oil & butter for 4 minutes, or until done, on each side.  Remove from pan and keep warm. Add remaining ingredients to the pan and stir well.  Pour over chicken and serve.

Mom's Zucchini Bread

3 cups of all purpose flour
1t. salt 
1t. baking soda
1t. baking powder
3t. ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cup white sugar
3t. vanilla extract
2 cups grated zucchini
1 cup of chopped walnuts (I substituted the walnuts for chocolate chips, but I think both would taste great)

1. Grease and flour 2 8X4" pans. Preheat oven to 325 degrees
2.  Sift together flour, salt, baking soda, baking powder & ground cinnamon
3.  Beat eggs, oil, sugar & vanilla together in your mixer.
4.  Stir in the flour mixture with the wet ingredients and beat well.
5.  Stir in zucchini and nuts (chocolate chips)
6.  Pour batter into prepared pans
7.  Bake for 40-60 minutes or until a toothpick tester comes out clean
Cool in pans and on the rack for 20 min.  Remove from pans and continue cooling on rack.

Peach Cobbler

  • Mix together: (Allrecipes part)
  • 8 fresh peaches - peeled, pitted and sliced into thin wedges
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch

1 1/2 cups flour
1 1/2 cups brown sugar
1 1/2 cups oats
1/4 t. baking soda
1/2 t. salt
1/4 t. baking powder
3/4 cup melted butter
Using your dough hook in the kitchen aid mix together all of the ingredients except for the melted butter.  Add the butter after the other ingredients are mixed, mix this until it turns crumbly (do not over mix) this will happen fast.  
Pour the peach mixture into a greased 9X13 glass dish and sprinkle the topping over.  Bake at 350 degrees for 45 min. Serve with vanilla ice cream.
The topping portion of this recipe is great for apple crisp or any berry or peach cobbler, so delish.

Beefy Nacho Soup

1 lb. lean ground beef
1 T taco seasoning mix
1 can condensed nacho cheese soup
1 can diced tomatoes and green chilies, undrained
1 1/2 cups milk
l/4 cup shredded cheddar cheese
1/2 cup of frozen or canned corn
1 cup uncooked macaroni
1/2 cup sour cream
1/2 cup crushed tortilla chips

In a large pot or non stick pan cook ground beef over medium heat seasoning with salt and pepper.  Drain, and add all the remaining ingredients except for the cheese, sour cream and chips. bring to a boil and cook until noodles are done.  Just before serving stir in the sour cream and top each bowl with the shredded cheese and tortilla shells.
Yum!  This is a huge hit at our house, especially for fall.  We double this at our house.

Focaccia Bread

2 2/3 cup flour
1 t. sugar
1 t. yeast
1 t. garlic powder
1 t. dried oregano
1 t. dried thyme
1/2 t. dried basil
1 pinch of black pepper
1 T vegetable oil
1 cup water
2 T olive Parmesan cheese
1 cup shredded mozzarella cheese

1. In a large bowl stir together the flour, sugar, yeast, garlic powder, oregano, thyme, basil and pepper.  Mix in the vegetable oil and water.
2. When the dough has pulled together turn out onto a lightly floured surface, and knead until smooth and elastic.  Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil.  Cover with a damp cloth and let it raise in a warm place for 20 minutes.
3.Preheat the oven to 450 degrees. Punch dough down, place on a greased baking sheet.  Pat into a 1/2" rectangle.  Brush top with olive oil. Sprinkle with Parmsan and mozzarella cheese.
4. Bake in a preheated oven  for 15 minutes or until golden brown, serve warm.

Mom's Zucchini Bread

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

  • 3 teaspoons ground cinnamon

Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Meat loaf

2 eggs
1 lb. hamburger
1 green pepper chopped
1/2 yellow onion chopped
1 jar of chili sauce (I prefer homemade)
salt & pepper to taste
slosh of Worcestershire sauce
1/2 package of saltine crackers
Mix together smooth into a sprayed 9X13 baking pan top with ketchup cook at 350 degrees for 45 minutes

Mexican Casserole

Corn tortilla shells
1 lb. cooked hamburger
1/2 onion chopped
shredded cheddar cheese
1 can of olives sliced
Mix:
1 can of green chili's
1 cup sour cream
1 can of enchilada sauce
Layer the tortilla shells, hamburger, onions, cheese & olives...pour the sauce mixture over the top and bake at 350 degrees for 30 minutes.  When it's finished top with chopped tomatoes and lettuce.

Danish dessert (homemade)

1 cup sugar
2-3 T cornstarch
Bring this to a boil till thick, add to this 1 small package of strawberry, raspberry or peach jello.
This is great to mix with fresh strawberries for strawberry shortcake.

Zucchini Sausage Pasta

  • 1 pound Italian turkey sausage links, casings removed
  • 2 medium zucchini, sliced
  • 1 can (15 ounces) tomato sauce
  • 1 cup picante sauce
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons sugar
  • 1 teaspoon Italian seasoning
  • 2 cups cooked small shell pasta
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup shredded part-skim mozzarella cheese
    • In a large nonstick skillet, cook and crumble sausage over medium heat until no longer pink. Add zucchini; saute 2 minutes longer. Drain. Stir in tomato sauce, picante sauce, onions, garlic, sugar and Italian seasoning. Reduce heat; simmer, uncovered, for 5 minutes.
    • Stir in pasta and Parmesan cheese; heat through. Remove from the heat. Sprinkle with mozzarella cheese; cover and let stand for 5 minutes or until cheese is melted. Yield: 7 servings.

Lemon Pound Cake

From: Pillsbury...
Beat until fluffy:
1 cup butter 
2 cup sugar
Add:
1/4-1/2 cup lemon juice
3 lemon rinds
Mix & then add to the butter mixture. Alternate adding the flour mixture while adding 1 cup of sour cream:
4 cups flour
1/2 t salt
1/2 t soda
Beat/whip 5 eggs with 1 cup of sugar. Fold this into the butter mixture.  Beat until fluffy.
Pour this into 2 large loaf pans that have been buttered and floured.  Bake at 350 degrees for 1 hour.
Glaze:
powdered sugar
little vanilla
milk, cream or lemon juice
Boil this in a sauce pan until smooth, brush over the loaves.

Layered green salad

1 head of lettuce typically ice berg chopped
1/2 cup diced celery
1/2 cup diced  carrots
1/2 cup green onions chopped
1/2 cup green pepper chopped
1 cup diced fresh mushrooms (optional)
1 10 oz. package frozen green peas
1/2 cup cauliflower chopped
1/2 cup broccoli chopped
1 1/2 cups miracle whip or mayonnaise
1/2 cup sour cream
2 T sugar
1/4 t salt
1/8 t pepper
1/2 t season salt
1 t lemon juice
1/2 cup cheddar cheese grated
5 strips of bacon cooked crisp and crumbled
After all of the vegetables are prepared, layer them in the order listed (using a glass bowl will show the beauty of the layering in this salad). Spread each layer out evenly, being careful to not mix them all.  In a separate bowl combine the miracle whip, sour cream, sugar, salt, season salt lemon juice and pepper.  Mix well.  Carefully spread this mixture over the top of the vegetable layers.  Sprinkle the layer of cheddar cheese on next.  Then top the salad off by sprinkling the crumbled bacon on top of it.  Close tightly and refrigerate for several hours before serving.

Lemon butter cookies

zest of one lemon
2 sticks of unsalted butter
1/2 cup powdered sugar
1 egg yolk
2 t vanilla
1 cup flour
Beat butter in an electric mixer until well combined.  Add zest, powdered sugar, egg yolk, and vanilla.  Slowly add flour, mix only until combined. Scrap the bowl with a spatula.  Divide the batter into two even parts and flatten to a disk and refrigerate half hour.  Remove from fridge and roll into a sausage looking shape and put into a paper towel inner, and refrigerate for another half hour.  
Whisk one egg yolk and spread evenly over dough.  On wax paper sprinkle sugar (decorative colors for the appropriate season).  Roll dough into the sugar, and cut into 1/4 inch pieces.  Bake at 350 degrees for 12-14 min. Do not allow them to get any color, remove them before they brown.

Lettuce Wraps

6 teriyaki chicken breasts chopped finely
1/2 can chopped water chestnuts
1/2 cup chopped green onions
1 1/2 t grey pup-on mustard
1 cup yoshida gourmet sauce
1 t oyster sauce
garlic salt
pepper to taste
1/8 t seasoned rice vinegar
Simmer until liquid is mostly absorbed serve with crisp ice berg lettuce.
Sauce:
1 T sugar
2 T soy sauce
1 T water
1/2 t mustard
1/4 t chili sauce
1/4 t rice vinegar
1 drop of chili oil

Lasagna

12 lasagna noodles cooked 
1 lb. sausage cooked
1-2 green peppers chopped (saute this with the onion)
1 small onion
1 jar of spaghetti sauce
12 oz. of cottage cheese
1/2-3/4 of a package of ricotta cheese
1 egg
Parmesan cheese
1/2 t garlic powder
1 T dried parsley flakes
2 cups mozzarella cheese (reserve 1 cup)


Cook sausage, saute green peppers & onions set aside. Mix cottage cheese, ricotta, 1 cup of mozzarella cheese, egg, Parmesan cheese, garlic and parsley.  Spray a 9X13 dish, spread a couple of good spoonfuls of spaghetti sauce in the bottom.  Place one layer of noodles down then 1/2 of your sausage pepper/onion mixture and 1/2 of your cheese mixture. Top this with 1/4 jar of spaghetti sauce and then noodles. Repeat this once more using of course the remaining cheese sauce, sausage.  Top with noodles cover with remaining sauce and the 1 cup of mozzarella cheese that was set aside.  Cover with foil and bake at 350 degrees for 45 min. uncovering it for the last 10 min.  Let rest, serve.  Serve with a green salad and toasted french bread.  To toast the french bread cut it lengthwise spread melted butter down both sides of the bread, sprinkle this with garlic salt, parsley flakes and some Parmesan cheese.  Put the two halves back together and wrap this in foil, I cook this alongside the lasagna so when the lasagna is done so is the bread (put it in when there is about 30 min. left on your timer)

Lemon Lush

Mix together, press into a 9X13 pan and bake for 20 min. at 350 degrees
1 cup flour
1/2 cup margarine
1/2 cup nuts
Beat until fluffy, once crust has cooled smooth this over the top:
8 oz. of softened cream cheese
1 cup powder sugar
1 cup cool whip
Mix & smooth over the top of your cream cheese mixture:
3 small packages of lemon instant pudding following pudding mixing instructions on the package.  Top with cool whip, refrigerate for a couple of hours at least before serving.  This is one of my favorite summer time treats:)

Lime Rice (cafe rio like rice)

1 cup rice
2 cups chicken broth
1 T lime juice
1 T garlic powder
1 T dried onions
pinch of salt
Ingredients to add to the rice once it is finished cooking:
1 cup cilantro
1 T lime juice
1 can of green enchilada sauce
Cook the rice normally except do not add any additional water (the chicken broth is the liquid).  When it is finished cooking add your 1 cup cilantro, 1 T lime juice & 1 can of green enchilada sauce.

Hot Spiced Lemon Drink

2 1/2 qt. water
2 cup sugar
1 1/2 cup orange juice
1/4 cup pineapple juice
1/2 cup +2 T lemon juice
1 cinnamon stick
1/2 t. whole cloves
Combine water, sugar & juices. Place cinnamon stick and cloves on the double thick cheese cloth; bring up corners and tie with kitchen string.  Place in liquid and cook on low until heated through.  Discard spice bag before serving. You can put in slow cooker to keep warm.  This also tastes great chilled, such a yummy treat for the holidays.

Chicken Stir Fry

2-3 chicken breasts
1 cup sliced carrots
1 cup sliced celery
1 medium onion sliced
1 small head of broccoli chopped
Sauce: Mix this and set aside
1 can of chicken broth
2 T corn starch
1 T soy sauce
1/2 t. ginger
1 clove of minced garlic
Stir fry the chicken using 2T vegetable oil, until chicken is light brown, remove chicken from pan.  Add the vegetables and stir fry them for about 5 min. (make sure your stove is on high and your pan is very hot).  Add the chicken back to the pan and add the sauce, stir this constantly until the mixture boils & thickens.  Serve over rice or ramen noodles.
You can use whatever vegetables you would like to use, this is just what I usually have on hand.

Buttermilk Syrup

2 cubes butter
1 1/2 cups sugar
1 cup buttermilk (you can make your own by mixing 1 cup of milk with 1 t. of lemon juice and microwaving for about 35 or so sec. it will look lumpy on top, that's how you know it's right)
1 t. baking soda
1 t. vanilla


Combine first 3 ingredients in saucepan until boiling.  Take off heat and add baking soda and vanilla.  Serve with German pancakes:)

German Pancakes

2 T butter
6 eggs
1/2 pkg. cream cheese
1 cup milk
3 T honey
1 cup flour
1/2 t. salt
1/2 t. baking powder


Preheat oven to 400 degrees. Place butter in a 9X13 baking dish and place in the oven until butter sizzles. (You can also just spray your dish with pam) Place remaining ingredients into a blender and blend until smooth.  Remove pan form oven and immediately pour batter into it. Bake until puffed and golden brown about 20-25 minutes.  Serve warm with desired toppings. (Fruit, powdered sugar, jam, whipping cream and your favorite syrup)  See Buttermilk Syrup recipe

Chicken Tortilla Soup

Saute together:
1/4 cup margarine
1 bund green onions
1 bunch cilantro
2 cups chopped onion
Add:
4 cans chopped tomatoes
2 cups tomato juice
2 cups water
4 cups chicken broth
1 T paprika
1/2 t. cayenne pepper
1 t. oregano
1 T salt
1 T garlic powder
1 t. sugar
4-5 chicken breast cooked
Simmer for 30 minutes.  To plate this, place broken tortilla chips at the bottom of a bowl then add your soup, garnish with shredded cheddar cheese and avocado

White Chili

2 cans Great Northern beans
1 small onion chopped
1 small can diced gren chilies
2 cups chicken (cooked and cubed)
1 T cumin
2 garlic cloves
1 cup chicken broth
1 T chili powder
1/4 t. salt


Mix together in pot and simmer for 25 minutes.  
Add:
1/2 cup sour cream
1 cup grated cheddar cheese
Serve with tortilla chips or cheese quesadilla's:)  So good, more like a wonderful taco soup!

Potato Soup

Cook:
5 cup water
5 t. chicken bullion
1 medium onion chopped
7-8 medium potato peeled & cubed
2-3 grated carrots
2-3 ribs of celery chopped
Add:
1/4 cup butter
1 T parsley flakes
garlic salt to taste
1 t. salt
pepper to taste
Mix:
1/3 cup flour with water and whisk soup while adding this.
Add:
1 can evaporated milk

Heat until thickened, turn off the oven and add 3 cups grated cheddar cheese.

Optional:
Cooked crumbled bacon
cubed ham
corn

Rolo cookies

1 box of chocolate cake mix
4-6 packs of rolo's
1/3 cup vegetable oil
2 eggs

Mix together the cake mix, oil and eggs. Using a cookie scoop, scoop up the dough place a rolo inside and then cover the bottom of the rolo using dough.  You can roll this in your hands if that is easier. Bake at 350 for 10-13 minutes

Banana Bread

Cream together:
1/2 cup margarine
1 1/2 cup sugar
Add:
2 eggs & 4 black banana's and beat
Add:
4 T milk
1/2 t. white vinegar
1 t. vanilla
Mix in a bowl & then add to the wet:
2 cups flour
1 t. salt
1 t. baking powder
1 t. baking soda
Mix till flour is incorporate.  Grease and flour 2 loaf pans, bake at 350 for 45 minutes (check for doneness). Let rest in pans for about 5 minutes and then remove to cooling racks.
This really is the best banana bread I have ever tasted, just make sure to grease your pan well.

Party Sandwiches

1 pkg. cream cheese
1 cup sharp cheddar cheese
3/4 cup green onions sliced
1/4 cup mayonnaise
1 T Worcestershire sauce
1/2-3/4 cup of ham and roast beef
pre-sliced long dill pickles
1 loaf of Italian or french bread


Mix the first 5 ingredients together, cut the french bread lengthwise and then remove the inners of the french bread to create a canoe.  Spread 1/2 of the cheese mixture on the top and 1/2 on the bottom, then place the pickles down on the bottom, add meat and place the top of the french bread to create your sandwich.  Wrap tightly with saran wrap.  Store in the fridge for at least 1-2 hours before serving.  I like to slice mine to make finger sandwiches and then stick party toothpicks in them.

Creamy Ham Casserole

2 cups fresh or frozen broccoli flowerets, thawed
1 1/2 cups shredded cheddar cheese
1 1/2 cups coarsely chopped ham
1 1/2 cups rotini pasta, cooked, drained
1/2 cup miracle whip dressing
1/2 cup green or red pepper chopped
1/4 cup 2% milk
Seasoned croutons (optional)
Mix all ingredients except 1/2 cup of the cheese and the croutons.  Spoon into 1 1/2 qt. casserole dish.  Sprinkle with remaining 1/2 cup cheese.  Bake at 350 for 30 min. or until thoroughly heated. Sprinkle with seasoned croutons makes 6 servings.

Hekka

1 lb. ground beef
1 large onion, minced
2 cups sliced carrots
2 cups chopped celery
2 cups chopped cabbage
1/2 cup kikoman soy sauce
1/2 cup water
1/2 t. ginger
salt & pepper to taste
1-2T cornstarch
1T brown sugar
1 t. chicken bullion
Saute hamburger and onions together.  Add vegetables and cook till crisp tender, meanwhile mix together all seasonings including soy sauce and water.  Pour over cooked meat and veg. mixture and allow to boil until it thickens. Serve over rice.  This is a very good quick easy meal.

Hamburger Soup

1 1/2 lb. hamburger
1/4 cup onions chopped
2 cans cream of celery soup
4 cups diced tomatoes pureed
1 can sliced carrots
1/4 t. garlic salt
2 T brown sugar
1/4 t. pepper


Brown hamburger and onions.  Add other ingredients and simmer for about 20--25 min.
