Spinach Salad

18 oz fresh baby spinach, stems removed
2 medium tart apples, chopped
2/3 cup peanuts
1/4 cup thinly sliced green onions
2/3 cup vegetable oil
1/4 cup vinegar
1 t salt
1 t ground mustard
1/2 cup raisins
2 T sesame seeds, toasted
1/3 cup honey
1 T grated orange peel
1 t curry powder

In a large bowl, combine the spinach, apples, peanuts, raisins, onions, and sesame seeds.  In a jar with a tight fitting lid, combine the remaining ingredients; shake well. Drizzle over the salad and toss to coat; serve immediately.

Layered green salad

From: Mom...

1 head of lettuce typically ice berg chopped
1/2 cup diced celery
1/2 cup diced  carrots
1/2 cup green onions chopped
1/2 cup green pepper chopped
1 cup diced fresh mushrooms (optional)
1 10 oz. package frozen green peas
1/2 cup cauliflower chopped
1/2 cup broccoli chopped
1 1/2 cups miracle whip or mayonnaise
1/2 cup sour cream
2 T sugar
1/4 t salt
1/8 t pepper
1/2 t season salt
1 t lemon juice
1/2 cup cheddar cheese grated
5 strips of bacon cooked crisp and crumbled
After all of the vegetables are prepared, layer them in the order listed (using a glass bowl will show the beauty of the layering in this salad). Spread each layer out evenly, being careful to not mix them all.  In a separate bowl combine the miracle whip, sour cream, sugar, salt, season salt lemon juice and pepper.  Mix well.  Carefully spread this mixture over the top of the vegetable layers.  Sprinkle the layer of cheddar cheese on next.  Then top the salad off by sprinkling the crumbled bacon on top of it.  Close tightly and refrigerate for several hours before serving.

Frito Lay Salad

1 bag of Frito lays chips
2 can of kidney beans-drained
6 roma tomatoes-cut & without the juice
1 red pepper chopped
1 green pepper chopped
6 green onions chopped
1 16oz. bottle Kraft Catalina dressing
1 can of corn-drained


Mix everything together except for the chips and dressing and chill for 1-2 hours, add the chips and dressing right before serving. Delish!

Almond Chicken Salad

4 cups cubed cooked chicken
1 1/2 cups green grapes-cut into half
1 cup chopped celery
3/4 cup sliced green onion
3 eggs hard boiled and chopped
1/2 cup mayonaise
1/4 cup sour cream
1 t. mustard
1 t. salt
1/2 t. pepper
1/4 t. onion powder
1/4 t. celery salt
1/8 t. dry mustard
1/2 cup sliced almonds-toasted
In a bowl combine first 5 ingredients, in a separate bowl mix everything else together except for the almonds.  Gently stir it all together, add almonds just before serving.

Raspberry Cheesecake Salad

3 small boxes cheesecake instant Pudding 
1 pack Graham crackers 
3 cups milk 
3 tbsp butter 
2. Tbsp sugar 
16 oz cool whip 
Bag frozen rasp 

Crush crackers in original bag then pour into ziploc bag (crush more if needed). Add melted butter and sugar and mix together. Put the bag in the fridge. Mix pudding and milk with a mixer until smooth. Stir in cool whip with a spoon. Refrigerate until ready to serve. Stir in graham cracker mix and frozen raspberries right before you serve.

Chicken Pasta Salad

2 to 3 chicken breasts cooked (I prefer to grill mine) & chopped
1 1/2 cups of broccoli florets chopped
3 carrots peeled and chopped
3 stalks of celery chopped
1/2 onion chopped
1 can black olives sliced
1 cup of cheddar cheese cubed
cherry tomato's cut in half
1/2 cup frozen peas (thawed)
1 lb. cooked & chilled pasta (I like rotini)


Mix together ingredients, top with ranch dressing (or dressing of your choice).  My family loves this especially if I make them homemade french bread to go with it:) This makes a lot, so if your not making this for your main dish you may want to half the recipe.  Great for pot luck parties.

Chilling Chicken Salad

Mix:
8 oz. cream cheese softened
1 cup mayonnaise
1/4 t. garlic powder
1/4 t. onion powder
1/4 t. season salt
1/8 t. pepper
1 t. balsamic vinegar
pinch of sugar
1 to 2 t. Dijon mustard
Chop:
4 to 5 chicken breasts
1/2 cup celery
1/2 cup slivered almonds, toasted
1/4 cup onion
1/3 cup olives
1/2 cup sliced red grapes
Serve with croissant rolls.  This makes a lot, I would half this for my family. We have used this for bridal shower mini sandwiches or for baby showers with a fruit skewer and it's fantastic!

Broccoli Grape Salad

2 cup halved green grapes
1/2 cup sliced green onions
2 cup broccoli florets rinsed and chopped
2 cup thinly sliced celery
1 cup toasted sliced almonds
2 cup diced cooked chicken
Dressing:
1 cup mayonnaise
2 T apple cider vinegar
2/3 cup sugar
Top salad with the dressing just before serving, this is super delish!

Cabbage Salad

1 large head of cabbage shredded
2 chicken breasts boiled and shredded
2 pkg. ramen noodles (chicken or oriental)
1/2 cup slivered almonds or cashews
4 green onions chopped
Dressing:
4 T sugar
3/4 cup olive oil
8 T rice vinegar
1 1/2 pkg of the flavoring from ramen noodle packet
Mix the dressing with a blender


Chop the salad ingredients, dress with the dressing right before serving

Craisin Broccoli Salad

2 large bunches of broccoli
1 white onion chopped
1 cup sunflower seeds
1 to 2 cups craisins
1 lb. bacon (cooked and crumbled)
1 1/2 cups mayo
3/4 sugar
3 T vinegar
Cut the broccoli into bite-size pieces.  Mix the mayonnaise, sugar & vinegar together.  Combine broccoli, onions, sunflower seeds, craisins, bacon and mayonnaise mixture.  Best if served the same day of preparation. 

Chinese Chicken Salad

1/2 head of cabbage chopped
4 green onion stalks
1/2 green pepper
1/2 cup almonds or cashews
1/2 cup sunflower seeds
1 pkg.crushed ramen noodles
1 small can mandarin oranges drained
2 cooked chicken breasts shredded (It taste best if the chicken is Philippine style, look up Philippine Chicken to see how to make that)
Dressing:
3 T sugar
1 t. salt (I like to use oriental ramen noodles so I can use the packet of seasoning in place of the salt & accent salt)
1 t. accent salt
1/2 cup vegetable oil
3 T vinegar (apple or white)


Mix ingredients in a bowl. Mix dressing using a blender, pour dressing over the salad just before serving.

Summer Chicken Salad Sandwich

2 cans of chicken (12.5 oz.)
1 cup mayo (I usually use less than this)
1 cup coleslaw dressing
2 cups cooked and cooled shell noodles
1/4 cup green onions chopped
1 cup pineapple drained and cut
2 cups red grapes cut in half
2 cups diced red apples (leave on the peel)
2 cups sliced celery
1 1/2 cups cashew nuts

Mix everything together except the apples and cashews (add these right before serving). Let chill for 2 hours, I like this inside croissant rolls. So refreshing on a summer day!
