Caramel apple dip

From: Unknown...

1 cup sugar
2 T light corn syrup
1/4 cup water
1/4 butter
1/4 cup of whipping cream
1 T Sour cream
3/4 t. coarse sea salt

In a 2 quart pot stir together sugar, corn syrup and water then heat over medium high heat (don't stir while it's boiling) let boil until it's a medium amber color, be careful not to let it get too dark.  Turn off heat and add remaining ingredients, whisk really well and pour into a glass dish.  Delish!

Cookie dough mix

1 8oz. pkg cream cheese
1/2 cup powder sugar
1 cup powder sugar
2 T brown sugar 
1 1/2 t. vanilla
1 cup chocolate chips
1 cup toffee bites

Beat first 2 ingredients until smooth.  Add remaining ingredients and mix.  Serve with nilla wafers  or my favorite granny smith apples.  This is a great party pot luck treat!

Hot Spiced Lemon Drink

2 1/2 qt. water
2 cup sugar
1 1/2 cup orange juice
1/4 cup pineapple juice
1/2 cup +2 T lemon juice
1 cinnamon stick
1/2 t. whole cloves
Combine water, sugar & juices. Place cinnamon stick and cloves on the double thick cheese cloth; bring up corners and tie with kitchen string.  Place in liquid and cook on low until heated through.  Discard spice bag before serving. You can put in slow cooker to keep warm.  This also tastes great chilled, such a yummy treat for the holidays.

Party Sandwiches

1 pkg. cream cheese
1 cup sharp cheddar cheese
3/4 cup green onions sliced
1/4 cup mayonnaise
1 T Worcestershire sauce
1/2-3/4 cup of ham and roast beef
pre-sliced long dill pickles
1 loaf of Italian or french bread


Mix the first 5 ingredients together, cut the french bread lengthwise and then remove the inners of the french bread to create a canoe.  Spread 1/2 of the cheese mixture on the top and 1/2 on the bottom, then place the pickles down on the bottom, add meat and place the top of the french bread to create your sandwich.  Wrap tightly with saran wrap.  Store in the fridge for at least 1-2 hours before serving.  I like to slice mine to make finger sandwiches and then stick party toothpicks in them.

Guacamole dip

3-4 avocados
1/8 t. garlic powder
1/8 t. onion powder
1/4 cup lemon juice
1/2 cup sour cream
1/4 t. salt
1/8 cup chopped green onions
1 cup chopped tomatoes
Cut and smash the avocados and mix everything together:)

Fresh Salsa

1 white onion (big)
1 bunch of cilantro (leaves, not stems)
Juice of 1 lime
4 tomatillos (husk removed and sticky stuff washed off)
1-2 jalepeno peppers
4 cloves of garlic (garlic press makes this really easy)
4 tomatoes (I put more in; romas are best—but a combo is good too)
2 teaspoons salt

Peel garlic and onion. Use all parts of the jalepeno for warmer salsa, or remove the seeds and white inner flesh for mild salsa. Using a food processor chop the onion, garlic, cilantro, tomatillos, and jalepenos together.  Add the salt and lime juice and mix well. Again, somewhere between chop and puree the tomatoes. Mix and enjoy!

Artichoke dip

4 cloves of garlic chopped/minced
1 10 oz. package frozen chopped spinach (thawed and drained, use cheese cloth it makes this so much easier)
1 14 oz. can of artichoke hearts-drained and chopped (do not used marinated)
1 15 oz. container of Alfredo pasta sauce (Bortelli brand)
2 cups shredded mozzarella cheese
1/3 cup grated parmesan cheese
1 8 oz. package of cream cheese-softened


Mix ingredients together, put into a crock pot and cook on low for 2 to 3 hours (this is the preferred cooking method). 
*You can also preheat your oven to 350 degrees and cook this in a 9X9 dish covered for 30 min.
I like to serve this with baguette bread that I have sliced and toasted in the oven then use a fresh piece of garlic and cut off the end and rub over the hot bread, it will melt like butter onto the toasted bread....so good!

Beef Stick

Mix this together cover and let sit over night in the refrigerator:
4 lb. lean hamburger
1/4 cup quick tenderizer blend salt
Add to the meat and mix:
2 T. liquid smoke
2 t. garlic powder
1 T. peppercorn or 2 t. ground pepper


Roll into 4 or 5 logs and wrap in cheese cloth, bake on a broiler pan for 4 hours (this will allow the fat to drip away form the meat) at 225 degrees.  Once cooled wrap in seran wrap and let chill for 4 hours in the refrigerator before serving.  Store in fridge.  This is a perfect party item, serve with homemade cheese ball and crackers:)

Hot Chicken Salad

3-4 chicken breasts cooked and chopped
4 celery stalks chopped
1 can olives chopped
4 green onion stalks chopped
1 small can of crushed pineapples (drain very well)
1 t. vinegar
season salt
pepper
mayo just enough to moisten
1/2 cut roasted almonds or pecans
lemon juice just a little slosh
sugar about 1 T.
1 to 2 cups shredded cheddar cheese


Chop all ingredients very well, mix top with cheese and bake covered (removing the foil for the last 10 min) for 25 to 30 minutes at 350 degrees.
This is super yummy served on hot fresh homemade rolls (any roll will do)!  I love to eat this as left overs with saltine crackers, also good on crusty baguette bread that you have toasted in the oven with a little fresh garlic spread on top....come to think of it it would be a great party dish if you need snack type of a dish:)
