Mom's zucchini bread

From: Allrecipe's...

3 cups flour
1t. salt
1t. baking soda
1t. baking powder
3t. cinnamon
mix this

In a separate bowl beat:
3 eggs
1 cup veg oil
2 1/4 cup sugar
1 T vanilla

Add dry ingredients to the wet and mix.  Add to that 2 cups of grated zucchini and 1 cup of chopped walnut (optional)
Poor into 2 sprayed and floured bread pans and bake at 325 for about 1 hour, check for doneness.

Cheesy garlic breadsticks

  • 1 Tbsp. yeast
  • 1 cup very warm water
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 Tbsp. oil
  • 2 1/2 c. white flour
  • Half a stick of melted margarine or butter
  • Garlic salt
  • Shredded Mozzerella
  • Italian Seasoning
  1. Mix yeast, sugar, and water.  Allow to sit for a few minutes to get yeast activated.
  2. Add salt, oil and flour.  Mix well.
  3. Knead into a smooth dough on a floured surface for about 2 minutes.  (You can also do this all in your mixer with a dough hook.)
  4. Allow dough to rest 5-10 minutes.
  5. Lightly grease a pizza pan (or cookie sheet).
  6. Place the ball of dough in the middle and roll out to fit pan, either round or rectangle whatever shape pan you have.
  7. Melt your butter and add garlic salt to your liking, some like more garlic than others, so just do what your family likes.
  8. Spread the garlickly butter all over the dough.
  9. Top with as much mozzerella as you like.
  10. Sprinkle with italian seasoning.
  11. Bake at a pretty high temp 425 or so until bottom is cooked and cheese is melty.
  12. Cool for a few and then slice!

Mom's Zucchini Bread

3 cups of all purpose flour
1t. salt 
1t. baking soda
1t. baking powder
3t. ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cup white sugar
3t. vanilla extract
2 cups grated zucchini
1 cup of chopped walnuts (I substituted the walnuts for chocolate chips, but I think both would taste great)

1. Grease and flour 2 8X4" pans. Preheat oven to 325 degrees
2.  Sift together flour, salt, baking soda, baking powder & ground cinnamon
3.  Beat eggs, oil, sugar & vanilla together in your mixer.
4.  Stir in the flour mixture with the wet ingredients and beat well.
5.  Stir in zucchini and nuts (chocolate chips)
6.  Pour batter into prepared pans
7.  Bake for 40-60 minutes or until a toothpick tester comes out clean
Cool in pans and on the rack for 20 min.  Remove from pans and continue cooling on rack.

Focaccia Bread

2 2/3 cup flour
1 t. sugar
1 t. yeast
1 t. garlic powder
1 t. dried oregano
1 t. dried thyme
1/2 t. dried basil
1 pinch of black pepper
1 T vegetable oil
1 cup water
2 T olive Parmesan cheese
1 cup shredded mozzarella cheese

1. In a large bowl stir together the flour, sugar, yeast, garlic powder, oregano, thyme, basil and pepper.  Mix in the vegetable oil and water.
2. When the dough has pulled together turn out onto a lightly floured surface, and knead until smooth and elastic.  Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil.  Cover with a damp cloth and let it raise in a warm place for 20 minutes.
3.Preheat the oven to 450 degrees. Punch dough down, place on a greased baking sheet.  Pat into a 1/2" rectangle.  Brush top with olive oil. Sprinkle with Parmsan and mozzarella cheese.
4. Bake in a preheated oven  for 15 minutes or until golden brown, serve warm.

Mom's Zucchini Bread

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Lemon Pound Cake

From: Pillsbury...
Beat until fluffy:
1 cup butter 
2 cup sugar
Add:
1/4-1/2 cup lemon juice
3 lemon rinds
Mix & then add to the butter mixture. Alternate adding the flour mixture while adding 1 cup of sour cream:
4 cups flour
1/2 t salt
1/2 t soda
Beat/whip 5 eggs with 1 cup of sugar. Fold this into the butter mixture.  Beat until fluffy.
Pour this into 2 large loaf pans that have been buttered and floured.  Bake at 350 degrees for 1 hour.
Glaze:
powdered sugar
little vanilla
milk, cream or lemon juice
Boil this in a sauce pan until smooth, brush over the loaves.

Banana Bread

Cream together:
1/2 cup margarine
1 1/2 cup sugar
Add:
2 eggs & 4 black banana's and beat
Add:
4 T milk
1/2 t. white vinegar
1 t. vanilla
Mix in a bowl & then add to the wet:
2 cups flour
1 t. salt
1 t. baking powder
1 t. baking soda
Mix till flour is incorporate.  Grease and flour 2 loaf pans, bake at 350 for 45 minutes (check for doneness). Let rest in pans for about 5 minutes and then remove to cooling racks.
This really is the best banana bread I have ever tasted, just make sure to grease your pan well.

Garlic naan bread recipe

1 T. active dry yeast
4 T. sugar
1 cup warm water
1 beaten egg
3 t. warmed milk
2 t. salt
3 to 3 1/4 cup flour
2 garlic cloves minced
1/4 cup melted butter
parsley flakes or cilantro


Place first three ingredients in your bosh bowl, mix just to dissolve and proof the yeast for about 10-15 min.  Add all remaning ingredients except the butter and parsley.  Mix the dough for about 2 min. on speed 2 (this should be the consistency of a soft dough) Allow the dough to raise until doubled, roll this into small balls, let raise again.  At this point you will roll out the balls of dough, if you are making pizza on the grill, place some flour on the back side of a cookie sheet put two of your rolled out "minni" pizza's on the sheet and fix it with your pizza toppings and sauce.  Grill for just a few minutes and serve (this is delish, we have this all the time and every person who has tried it loves them).  


If your making naan bread to go along with your curry dish or coconut thai curry dish etc. you'll place them on a grill that has been oiled (before heating of course) and once it is cooked on both sides (just a couple min.) brush melted butter over the top and sprinkle with parsley or cilantro.  Both are great, and so easy to do, enjoy!:)

Banana crumb muffins

1 1/2 cup all purpose flour
1 t. baking soda
1 t. baking powder
1/2 t. salt
3 banana's mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup melted butter
1/3 cup packed brown sugar
2 T all purpose flour 
1/8 t. cinnamon
1 T butter


Preheat oven to 375 degrees.  Lightly grease or line 20 muffin cups.  In a large bowl mix together 1 1/2 cup flour, baking soda, baking powder & salt. In another bowl beat banana's, sugar, eggs and melted butter.  Stir the banana mixture into the flour mixture just until moist.  Spoon into your prepared muffin pans.  Mix brown sugar, 2 T flour and cinnamon cut in 1 T butter. Crumble this together and sprinkle over the muffins. Bake for  18-20 min. check for doneness.

Rolls

From: Andrea...
5 cups hot water
1 cup sugar
1 cup evaporated milk
4 T yeast
4 eggs at room temperature
14 cups flour
4 t. salt
1 cup oil
Combine first 6 ingredients in your bosh (using the whisk beater) reserving 3 of the cups of flour, beat just till mixed.  Switch to your dough hook.  Let raise till the dough is to the top of your bosh bowl, turn on the bosh and beat the dough down, add salt oil and remaining flour to make a soft dough.  Mix on speed 1 for 10 minutes.  Form rolls, raise until doubled and cook at 375 degrees for 10-12 minutes.
*Cinnamon roll modification:
Increase sugar to 1 1/2 cups, roll out to a 14X30 rectangle, spread over this 1 cube of butter, 1 cup of brown sugar and some cinnamon.  Bake.
This is such a great recipe these rolls/cinnamon rolls are amazing!

Corn Bread

3/4 cup corn meal
1 3/4 cup flour
2 t. baking powder
1 1/2 t. salt
3/4 cup sugar
2 eggs beaten
1 1/2 cup canned milk (I also use regular milk, it works just fine)
1/2 cup oil


Mix dry ingredients in a bowl. Mix in a kitchen aid all of the remaining ingredients, add the dry to the wet and mix only enough to combine.  bake at 350 for 30 min. in a sprayed 9X13 dish.  This is a great recipe, I don't usually like corn bread but this one is great, such a nice side to chili!

Sticky Rolls

Dissolve 2 pkgs yeast (2T) in 1/2 cup warm water and 1/2 T sugar. On stove scald 1 c. milk add 1/2 c. shortening. Let melt, let cool then pour in mixer when the recipe tells you to.

In mixer add:
1/2 cup sugar
1/2 T salt
3 eggs well beaten
4 cups flour (I have to add more because mine was to sticky)

Add yeast after milk

Rise until double. About 30-45 min
Split in half and roll out

In bowl mix about 1 cup sugar with one orange rind grated
butter then sprinkle orange mixture and cut like pizza then roll up.

Let raise another 45 minutes or until doubled in size,  bake at 425 for 10-12 min. (I actually do mine for about 8-9 minutes or else they burn).  These are so good I can't hardly stand it!
